AYAM BUAH KELUAK
Chicken braised with the black pulp of Indonesian black nuts
known as Buah Keluak. This is the signature dish of the Peranakans
which is a favourite among our customers. At PeraMakan, the nut
pulp is combined with spices before they are pushed back into
the nuts to be cooked along with the chicken.

AYAM RENDANG
Chicken is braised in spices and coconut milk and served with
toasted serondeng (spiced coconut). This dish is usually served dry
but at PeraMakan, our customers prefer theirs with more sauce.

SATAY AYAM PANGGANG
A hot favourite among our regulars, this fragrant dish of well-spiced
chicken is grilled and served with a thick spicy sauce. It is served
with a side dish of Nyonya Salad.

NYONYA AYAM GORENG
Pieces of whole leg and wings are marinated with fresh, ground
spices and coated with a light mixture of spiced flour before they
are deep-fried.

AYAM KLEO
The Nyonya version of chicken curry – this dish is enjoyed by
both the young and old and is a favourite with curry lovers for its
thick fragrant gravy. |

Chicken braised in a thick sauce of onions, coriander, pepper
and tamarind.

Duck braised in a thick sauce of onions, coriander, pepper and
tamarind and served de-boned.
